2 handfuls green beans
2 tbsp. pasture butter
1/8 cup whole raw almonds
1 tbsp. green garlic, minced
8 sage leaves
Salt + crushed black pepper
Bring a saucepan of water to boil and add the green beans. Blanch for 1 minute then remove to an ice bath (bowl of ice cold water). Set aside.
Place whole almonds in a bag and smack around a few times to rough crush them.
In a non-stick skillet, heat butter over medium and add the green garlic. Cook for 1 minute to soften, then add crushed almonds and whole sage leaves.
Cook, stirring regularly, until the sage begins to crisp up and the almonds brown. Careful because this will happen fast!
Add your blanched green beans to the skillet for a quick flash sauté. Season with salt and pepper and serve hot! Great with farm eggs in the morning or over a lean protein.
